    A Message from the Founder

    Welcome to a journey born from the soil, refined by science, and dedicated to the spirit of Indian agriculture.

    Living and working alongside grassroots farming communities, we have always marvelled at the agricultural abundance of the Western Ghats. Yet, every year, we also witnessed a recurring and severe challenge. Just as our hardworking farmers neared the completion of their intense cashew harvest, unseasonal summer rains would arrive. Within days, moisture-heavy raw cashews would begin to spoil in the fields, routinely rejected by traditional procurement channels.

    Witnessing our community lose 10% to 15% of their hard-earned annual yield to unpredictable climate shifts was the spark that drove us to act. We realized that mitigating this substantial post-harvest loss required a complete paradigm shift: we did not need to fight the rain by trying to dry the moisture-heavy seeds—we needed to let them grow.

    This search for a sustainable, resilient solution led us to a strategic collaboration with the ICAR - Directorate of Cashew Research (DCR) in Puttur. Under the guidance of their visionary scientists, we mastered the advanced post-harvest and biochemical techniques of controlled germination. What began as an operational initiative to eliminate crop waste quickly unlocked a functional, nutritional marvel. By sprouting the fresh cashew nut, we discovered we could reduce anti-nutritional factors like phytic acid by a staggering 95%, while simultaneously escalating the bioavailability of vital minerals like iron and calcium by up to eleven times.

    From this vital intersection of grassroots farming and elite institutional research, Chully Farm Service Pvt. Ltd. was born. This groundbreaking initiative was further empowered by NABARD, whose crucial support through their post-harvest management intervention activity enabled us to scale our vision and implement these sustainable solutions effectively.

    The Economic Challenge: Post-Harvest Waste Mitigation

      

    Unseasonal summer rains occurring right before the conclusion of the annual cashew harvest create severe operational and financial bottlenecks for Indian farmers. High ambient humidity during this critical window makes traditional sun-drying and processing highly risky, leading local traders to frequently halt raw cashew procurement.

    Consequently, smallholders routinely suffer a devastating 10% to 15% crop loss due to moisture-heavy produce spoiling rapidly in the fields. This climate-induced post-harvest spoilage inflicts a severe economic blow on vulnerable rural farming families and represents a substantial, highly preventable strain on national food security.

    The Nutritional Challenge: Enhancing Bioavailability and Reducing Phytic Acid

      

    While cashew kernels are highly valued globally for their premium healthy fats and proteins, their functional nutrition is naturally limited by phytic acid, an anti-nutritional compound. Raw cashew kernels contain significant concentrations of phytic acid, ranging from 190 mg to 4,980 mg per 100 grams on a dry weight basis. This compound acts as a natural binder in the human digestive tract, chelating essential minerals and significantly reducing their absorption while occasionally causing mild gastrointestinal discomfort.

    While traditional food science utilizes soaking, steaming, roasting, or fermentation to partially mitigate anti-nutrients, controlled germination (sprouting) is empirically proven to be the most effective intervention. Empirical scientific studies demonstrate that precise germination protocols can dismantle phytic acid structures, immediately unlocking the natural bioavailability of the nut's native minerals and maximizing its functional health benefits.

    Nutritional Analysis: Regular vs. Sprouted Cashew

      

    Comparative scientific data reveals that the controlled germination process fundamentally transforms the nutritional and functional profile of the cashew, converting it into an optimized, health-focused superfood.

    Macronutrient Optimization

    • Lighter Caloric Profile: Sprouting naturally      reduces the fat content from 42–48% down to 19–22%, lowering the overall      caloric value from 6,874 kcal/kg to 5,306 kcal/kg to deliver a lighter,      heart-healthy, diet-friendly option.
    • Low Sugar: Total sugars drop by 75% (from      8.00% down to a mere 2.00%) as the seed utilizes them for initial growth.
    • Enhanced Muscle Recovery: While the total      protein content shifts slightly from 20–24% to a balanced 15–18%, free      amino acids more than double from 0.48% to 1.06%, heavily promoting      superior muscle recovery, protein synthesis, and easy digestion.

    Anti-Nutrient Elimination

    • 95% Phytic Acid Reduction: A major dietary      breakthrough occurs during sprouting, where phytic acid undergoes a      drastic 95% reduction, plummeting from 0.49 mg/g to a mere 0.02 mg/g. This      effectively unlocks maximum mineral absorption in the human digestive      tract.

     Massive Mineral Bioavailability

    Due to the dramatic reduction of phytic acid binders, the concentration and availability of native minerals skyrocket:

    • Iron: Increases by 11 times, rising      from 30.4 ppm to 336.94 ppm.
    • Calcium: Surges by 19 times,      increasing from 0.03% to 0.58%.
    • Magnesium: Multiplies 4-fold, rising      from 0.03% to 0.14%.
    • Zinc: Increases nearly 7-fold,      jumping from 9.1 ppm to 60.62 ppm.
    • Potassium: Levels remain perfectly stable      and balanced at 0.85% in both regular and sprouted forms.
    • Note on Copper & Manganese: Conversely,      copper drops from 9.8 ppm to 0.66 ppm and manganese drops from 60.62 ppm      to 9.1 ppm, as both minerals are naturally consumed by the seed embryonic      cells to fuel active biological germination.

     Antioxidant and Phenolic Surge
